Café Parejas was produced by two husband/wife teams working at Jinotega’s highest elevations. Finca Miraflor, run by Don Manual and Yessinia has a cold, sunny microclimate allowing for slower development. Coupled with careful cultivation they produce coffee with less than 1% defect rates. Juan Carlos and Aracely continue a microlot tradition on familial land containing shade trees that protect both coffee and local wildlife.

Pacamara variety is a Pacas/Marogogype hybrid dwarf producing very large beans. Much attention has been given to its honey and natural process potential. Harvested cherry from the few Pacamara trees on each farm make up this year’s Brix Breaker nanolot offered by Gold Mountain Coffee Growers. Approximately four, 69kg bags were produced. A social enterprise, Gold Mountain helps partner producers maintain high standards through on-site quality control and dry milling at Finca Idealista for qualifying lots.
