Cool fact about Groundswell…
Groundswell’s West Loop location features a pair of Oji Kyoto-style slow-drip towers. These gorgeous towers use the variable of (lots of) time, not temperature, to extract a brew that's more refined and aromatic than cold brew methods that require steeping grounds completely in water. Good things come to those who wait!
Jason Foster, who originally moved to Chicago from Minnesota on a baseball scholarship to the University of Illinois Chicago, founded Groundswell Coffee Roasters in 2015. He comes from a background in coffee, initially taking a job with Starbucks out of college, and working his way up to management where he oversaw some of the highest volume Starbucks stores in Chicago (including #1 in the world).
One of the things we love about Groundswell is their affection for the craft of roasting…these guys pay VERY close attention to everything and keep it real; for example, they started out roasting all of their coffees in small batches on their Diedrich IR-5 roaster, which they still use today! They take great pain to acquire the highest quality green coffees sourced from origins across the world.
But we also love the intensity of this team. When Jason takes on something he takes it on completely in every way. In an interview with Daily Coffee News (by Roast Magazine), Foster says “When I got to Starbucks, the first week I immediately went to the library and got a dozen books on coffee. I started immersing myself in coffee, and found out how deep the rabbit hole went.” About a year later Jason began roasting at home, honing his roasting skills with different varietals and countless batches. Today, Groundswell is thriving, with locations across Chicago – at N Damen Ave, W Madison St, and N Lincoln Ave. These guys are going places…and fast!
